Wash and dry all fruit.
Hull the strawberries and leave some whole, then slice a few in half for colour and texture.
Peel and cut the pineapple into wedges or bite-sized pieces.
Peel the mandarins and separate into segments.
Slice the limes into wedges to serve alongside the platter.
Slice the kiwi fruit and prepare any extra fruit you are using.
Arrange the larger fruit first on a serving board or platter.
Add smaller fruit, cheese, crackers, nuts and sweet extras around the board to fill the gaps.
Place yoghurt dip or honey in a small bowl and add to the platter.
Finish with fresh mint, lime wedges and any decorative extras.
Serve fresh and enjoy.
