PINEY’S HONEY-ROASTED STONE FRUIT WITH CREAMY YOGHURT
Ingredients
- 4 ripe peaches
- 4 ripe nectarines
- 4 tablespoons pure Queensland Yellow Box honey plus extra to serve
- 20 g unsalted butter melted
- 1 teaspoon vanilla extract
- 1 cup thick creamy locally made Greek-style yoghurt
- 1/4 cup pistachios roughly chopped and lightly toasted
- Fresh mint leaves to garnish optional
Instructions
Prepare the fruit
- Preheat your oven to 200°C (180°C fan-forced).
- Wash the peaches and nectarines, cut them in half and carefully remove the stones.
- Arrange the fruit cut-side up in a shallow baking dish.
Add a little sweetness
- Combine the melted butter, vanilla extract and 1 tablespoon of Yellow Box honey.
- Lightly brush the mixture over the cut surfaces of the fruit.
- Roast until golden
- Place in the oven and roast for 15–20 minutes, or until the fruit is tender, juicy and just beginning to caramelise around the edges.
- Cooking time may vary depending on how ripe your fruit is.
Prepare the yoghurt
- While the fruit is roasting, spoon the creamy yoghurt into a bowl and give it a quick stir until smooth.
- Lightly toast the chopped pistachios in a dry frying pan over medium-low heat for 2–3 minutes, stirring frequently.
Let the honey shine! 🍯
- Remove the fruit from the oven and allow it to cool slightly.
- Arrange the warm peaches and nectarines on serving plates with a generous spoonful of creamy yoghurt.
- Drizzle the remaining 3 tablespoons of pure Yellow Box honey over the fruit and yoghurt.
- Finish with toasted pistachios, a few fresh mint leaves and an extra drizzle of honey if you fancy!
Notes
🍯 It’s all about the honey! Adding most of the Yellow Box honey after roasting allows its beautiful, delicate flavour to really shine through.
🍑 Use what’s in season. This recipe works beautifully with peaches, nectarines or a combination of both. Choose ripe but still slightly firm fruit for the best results.
🥛 Keep it local. A thick, creamy locally made yoghurt provides the perfect contrast to the sweet fruit and honey.
🔥 Try it on the BBQ! For a summer twist, cook the halved stone fruit cut-side down on a lightly buttered BBQ hotplate until tender and lightly caramelised. Finish with yoghurt and honey as above.
🍍 PINEY’S TIP!
Don’t skip that final drizzle of Yellow Box honey!
It’s what takes this dish from a simple bowl of roasted fruit to something really special.
