Mexican Style Corn
Mexican Street Corn
Ingredients
- 6 corn cobs husks removed and cleaned
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 3/4 cup Kenilworth hard feta cheese crumbled
- 1/2 Teaspoon garlic powder
- 1/4 Teaspoon sea salt flakes
- 1/4 Teaspoon pepper
- 8 - 10 coriander leaves chopped
- juice of half a lime
Instructions
- Place the mayonnaise, sour cream, cheese, lime juice, garlic powder, salt , pepper and half the chopped coriander leaves in a medium bowl (reserve the rest of the coriander for serving).
- Stir to incorporate the ingredients well.
- Grill the corn cobs on high for 6 - 8 minutes. Remove from the grill to a plate. Cover with mixture, sprinkle extra cheese over the cobs. Garnish with a sprinkling of remaining corinader and serve with line slices
