🥕🍯 Piney’s Honey & Thyme Carrots
Ingredients
- 1 kg super-fresh Aussie carrots peeled and cut into batons
- 2 tbsp local honey
- 40 g butter
- 2 –3 sprigs fresh local thyme
- Sea salt
- Cracked black pepper
Instructions
Parboil (Get Ahead – Day Before or Morning Of)
- Bring a large pot of well-salted water to the boil.
- Add carrots and cook for 4–5 minutes, until just tender but still firm.
- Drain well and allow to steam dry.
- Once cool, store in an airtight container in the fridge until ready to finish.
Finish & Glaze (Just Before Serving)
- Heat a large non-stick frying pan over medium heat.
- Add the butter and allow it to melt and foam gently.
- Add the carrots and thyme sprigs, tossing to coat.
- Drizzle in the honey and cook, tossing regularly, for 5–8 minutes until the carrots are glossy and the butter-honey mixture reduces into a light syrup.
- Season with sea salt and cracked pepper to taste. Remove thyme sprigs before serving if desired.
