• 1 cup Caster sugar
• 2 x large free range eggs
• 1 cup thick plain yoghurt
• finely grated zest and juice 1 large orange
• 1 1/4 cups Plain Flour
• 1 cup desiccated coconut
• 2 teaspoons baking powder
• pinch of salt

Passionfruit Syrup

• 1/4 cup lemon juice
• 1/4 cup ruby orange juice
• 1/2 cup Water
• 1 cup Caster sugar
• 1/2 cup passionfruit pulp about 6 passionfruit

To finish

• cooled passionfruit syrup
• mascarpone to serve
